Ingredients For Oxtail Pizza
- Two lbs Oxtails
- Tour tsp browning sauce
- Two Tsp garlic, minced
- Three sprigs of fresh thyme
- Two tsp soy sauce
- Two tsp neutral oil
- One carrot, peeled, chopped
- One onion, chopped
- Three scotch bonnets
- Two tsp ginger, minced
- Three sprigs of fresh thyme
- Two tsp oxtail seasoning
- Four tsp ketchup
- One bell pepper, chopped
- Two tsp kosher salt
- Enough oxtail seasoning. Make the seasoning at home by mixing one tbsp each of garlic powder, turmeric, onion powder, dried thyme paprika, and cayenne powder. Use a tablespoon of the mixture and store the rest of the seasoning for future use.
- Pizza dough (store-bought or homemade)
- One cup of shredded mozzarella cheese
- 1/2 cup sweet chili sauce
- Fresh cilantro, chopped (for garnish)
Cooking Instructions For Oxtail Pizza
- Cut the oxtails into pieces.
- Toss them with the seasoning, salt, and browning sauce. They should be fully coated.
- Arrange the oxtails in one layer and smoke them for 1.5 hours at 250F.
- After setting the smoker, continue with other processes.
- Add oil to a heavy casserole dish and heat it on a stove/oven at medium heat.
- Add the carrots, bell pepper, carrot, and onion to the dish and cook for five minutes until the onion becomes soft.
- Put in garlic, thyme, ginger, and scotch bonnet peppers, stir, and cook them for 1-2 minutes.
- Add ketchup, soy sauce, and more oxtail seasoning and stir.
- After 1.5 hours, your oxtails are ready, pour them into the casserole and add water. Ensure it covers the oxtails.
- Simmer the mixture at low heat for another 1.5 hours or until the meat on the oxtail is tender and apart.
- Remove all the bones and pour the meat into a mixing bowl.
- Add the sweet chili sauce and stir the mixture until you shred all oxtail meat.
- Grab a ready pizza and smear a thick shredded oxtail layer on its crust.
- Top it with mozzarella cheese and bake it in a preheated oven at the bottom rack. Set the timer to 15-20 minutes or until your cheese bubbles and the pizza crust is golden brown.
- Open your oven, remove the pizza, and drizzle sweet chili.
- Garnish with fresh cilantro and enjoy.
